Our First Edition limited to 500 hams carefully selected by our “Master Ham” comes from free-range Iberico pigs raised in the Dehesa pastures of Spain. During the crucial Montanera season, from October to February, the pigs graze on acorns and wild herbs, giving the ham its rich, nutty taste and healthy oleic acid content. Each ham is naturally cured for over 40 months using traditional methods, allowing it to develop exceptional depth of flavor and a buttery, melt-in-your-mouth texture. Sustainably produced and rooted in Spanish heritage, this ham is a true symbol of quality and authenticity.

Care Instructions

CORTEFINO is to be refrigerated at 0°C to 5°C until ready to serve. This ensures the ham retains its optimal taste and texture. Freezing is not recommended for pre-sliced Bellota ham, as it can compromise the delicate fat and texture. Only refrigerate and consume within the recommended time frame. Once the vacuum seal is broken, consume the slices within 2–3 days for the best experience.

The best way to serve CORTEFINO is bring it to room temperature: Remove the vacuum-sealed package from the refrigerator and let it sit at room temperature for 30 minutes before serving. This allows the natural fat to soften, enhancing the aroma and flavors. Then, arrange the slices on a plate, slightly overlapping but not stacked, to showcase their marbling and deep red colour.
