    Our First Edition limited to 500 hams carefully selected by our “Master Ham” comes from free-range Iberico pigs raised in the Dehesa pastures of Spain. During the crucial Montanera season, from October to February, the pigs graze on acorns and wild herbs, giving the ham its rich, nutty taste and healthy oleic acid content. Each ham is naturally cured for over 40 months using traditional methods, allowing it to develop exceptional depth of flavor and a buttery, melt-in-your-mouth texture. Sustainably produced and rooted in Spanish heritage, this ham is a true symbol of quality and authenticity.

    Care Instructions

    CORTEFINO Quartet individual cuts are to be stored in the refrigerator at a temperature of 0°C to 5°C to maintain its quality. If not consumed immediately, the ham can be frozen in its sealed packaging at -18°C. For optimal taste, consume within 6 months. Once opened, wrap any unused ham tightly in plastic wrap or place it in an airtight container to prevent drying out. Store in the refrigerator and consume within 5–7 days.
    To prepare and slice, allow the ham to rest outside the refrigerator for 30–60 minutes before slicing. This enhances its aroma and makes slicing easier. If you own a slicing machine, ensure the blade is sharp and clean. Adjust the machine for ultra-thin slices (1–1.5 mm thick) to fully enjoy the flavours and texture. If slicing by hand, use a sharp knife and slice thinly against the grain. This requires precision but enhances the eating experience. You also can take the ham to your butcher. Request it to be sliced thinly into even portions for convenience and optimal presentation.
